I gallop flat out,
Across the grass covered field.
The wind whips my face,
Dirt flings up beneath my hooves,
As they pound against the ground.

I love how you’ve used the verbs whips, flings and pound to give your poem pace and vibrancy - I could really picture your horse running.
I’m very impressed that you got all 31 syllables - was it hard to fit your words into the in 5 / 7 formula in each line?
